1/4 cup flour
2 cups milk
4 cups shredded sharp cheddar cheese, divided
2 tablespoons olive oil
2 pounds ground beef
1 onion, diced
1 green pepper, diced
1/2 tablespoon salt
1/2 tablespoon pepper
2 teaspoons onion powder
1/8 cup worcestershire sauce
1/4 cup ketchup
1/3 cup diced dill pickles
2 pounds tater tots (slightly thawed)
1/3 cup diced tomatoes

Directions:In a large pot, heat oil on medium heat. Add the chopped onion and green pepper. Allow to cook for 3 to 5 minutes, until they are translucent. In the same pot, add the ground beef. Allow to cook for 10 to 15 minutes or until completely cooked. Drain the beef, removing excess fat. Return the beef to the pot. Season with salt, pepper, onion powder, worcestershire sauce, and ketchup. Add the pickles, and stir. Set aside.
In a medium saucepan on low to medium heat, melt the butter. Whisk in the flour. Slowly pour in the milk, while whisking to remove the lumps. Once the milk has been added and begins to steam, add 2 cups of the cheese. Stir constantly until the cheese has melted and the sauce is smooth. Remove from the heat, and set aside.
In a 9 x 13" pan, pour in the beef mixture, spreading evenly in the dish. Add the tater tots, lining them in rows on top of the beef. Next, pour the cheese sauce over the tater tots. Sprinkle the diced tomatoes on top, and then sprinkle the remaining cheese on top. Bake at 350º for 30 minutes. |
