12 ounces spaghetti or angel hair pasta
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts
Salt and pepper
6 slices bacon
2 cloves garlic
2 cups diced tomatoes
3 cups baby spinach
1/2 cup heavy cream
1/3 cup grated parmesan
Basil for garnish

Directions:

Cook pasta until al dente. Drain, reserving 1/2 cup pasta water. Return to pot.

Meanwhile, heat oil in a large skillet over medium high heat. Season chicken with salt and pepper, and cook until cooked through and no longer pink, 4 minutes per side. Transfer to a cutting board, and slice into strips.

In a second skillet, cook bacon until crispy. Transfer to a paper towel lined plate, drain, and then chop.

Pour off 1/2 the fat from skillet. Add garlic, tomatoes, and spinach. Cook over medium heat until fragrant and slightly wilted, 2 minutes. Season with salt and pepper. Add heavy cream, parmesan, and 1/2 cup reserved pasta water. Simmer 5 minutes.

Add cooked pasta, and toss until fully coated. Then add chicken and bacon, and toss until combined.

Garnish with basil.
