1 package (3 ounces) lemon Jell-o
1 cup hot water
½ cup cold water
1 ½ tablespoons lemon juice
½ cup mayonnaise
¼ teaspoon salt
Dash pepper
¾ cup cottage cheese
1 cup drained, diced, canned peaches
½ cup diced celery
½ cup chopped pecans

Directions:

Dissolve gelatin in hot water. Add cold water, lemon juice, mayonnaise, salt, and pepper. Blend well with rotary beater Pour into shallow pan and chill in the refrigerator until mixture is set about one inch from the edge of the pan, but soft in the center, about 30 to 45 minutes. Turn mixture into a bowl and whip with a rotary beater until fluffy or use a well-chilled metal bowl and an electric beater. Fold in the cottage cheese, peaches, celery, and nuts. Spoon into a mold and chill until firm, in the refrigerator, at least 60 minutes. Unmold by dipping into hot water for 15 seconds.
