For crust:
1 ¾ cups graham cracker crumbs, finely chopped pecans, or a mix of both
¼ cup icing sugar
6 Tbsp unsalted butter, melted

For filling:
1 - 15 oz can sweetened condensed milk
1 Tbsp grated Key lime rind
½ cup Key lime juice
¼ tsp salt
2 slightly beaten egg yolks

For meringue:
2 egg whites
2 Tbsp sugar

Directions:

1. Stir the sugar and butter into the crumbs until well blended. Press into a pie plate. Bake at 350ºF for 10 minutes. Allow to cool.
2. Mix together all filling ingredients and stir until thickened (a result of the reaction of the milk with the lime juice). Pour into prepared pie shell.
3. Beat the egg whites until stiff but not dry, gradually adding the sugar. Cover the pie filling with the meringue. Bake at 350ºF for 10 to 15 min until meringue is slightly browned.
