4 salmon fillets, 6 oz. each...
1/2 pineapple, halved and sliced...
1/4 cup butter...
1/3 cup honey...
4 large garlic cloves, crushed...
2 T fresh lemon juice, about 1/2 fresh lemon...
Chopped fresh parsley...
Salt and pepper...

Preheat oven to 400º...
In a small sauce pan, melt butter over low heat, add honey, crushed garlic and lemon juice, whisk until the honey has melted through the butter and mixture is well combined, add 1 T of chopped parsley, mix well and set aside...
Cut 4 sheets of 14 inch length of aluminum foil...
On each sheet of foil place 2 or 3 half slices of pineapple, sprinkle with pepper, arrange salmon fillets on pineapple, drizzle
with the honey mixture, sprinkle with salt and pepper and top with more chopped parsley...
Pull sides of foil inward and seal, then roll up edges, leaving a little room for heat to circulate...
Transfer packets to a baking sheet and bake in oven for 12 minutes...
Remove from oven, open packet, be careful hot steam coming from inside packet, transfer to a plate....
Enjoy....
