6 summer squash, zucchini, crookneck, patty pan, or a mix, cut into 1 inch pieces
1 onion, chopped
3 peppers, seeded and chopped (red adds color interest)
1 eggplant, peeled and chopped (some prefer the skin left on)
2 tbs. cumin
1 tbs. oregano
fresh basil
salt and pepper
butter and olive oil for sauteing
Parmesan cheese if desired

Heat a large skillet, add about 1 tbs each butter and olive oil.
Slowly add the vegetables, browning and turning as you go
Cook the dish for 20 to 30 minutes until the vegetable are browned but not mushy.
Add the spices and salt and pepper to taste

Parmesan cheese optional but good

The addition of cumin is unique to this version of the dish, but we like the interest it provides. This recipe makes a good side dish for almost any meat.
