6 large red tomatoes
2 peppers
1 onion (Vidalia works well)
2 cucumbers
1/2 cup olive oil
1.2 cup red wine vinegar
2 cups bottled tomato juice
salt, pepper, and dill weed to taste

Directions:
Directions:
Peel and seed the cucumbers; core the tomatoes, and seed the peppers. Then coarsely chop with quartered onion in a food processor. Add the liquids. You want the result to be somewhat chunky, not a puree. Season to taste. Chill for a few hours.

Wonderful way to use up garden tomatoes. Freezes well without the vinegar and oil, which may be added after defrosting. The chopped soup base can also be sauteed for use in other soups and stews (make some without the cucumber to use this way).
