1 lb. ham cut in cubes
10 eggs, beaten
2 c. milk
1 c. cheddar cheese, shredded
1 c. Swiss or Muenster cheese, shredded or sliced
Fresh chives, chopped
salt and pepper to taste

Directions:

Spray a casserole dish (try an oval about 11 inches in length and 2 inches deep) with non-stick spray. Heat oven to 375º.

Beat eggs and milk until combined and smooth. Add the cubed ham to casserole dish. Add a handful of each cheddar cheese. Add the chopped chives. Top with the egg/milk mixture. Top with remaining cheese. Bake 30-40 minutes or until cooked through.
