1 lb candied red cherries
1 lb candied green cherries
1 lb seedless raisins
1 lb currants
1 lb mixed peel
1 lb chopped walnuts
4 ½ cups all-purpose flour
1 lb butter
2 cups white sugar
1 cup brown sugar
5 eggs
1 cup sweet sherry
1 cup strawberry jam, preferably home-made
1 tsp baking soda
2 tsp ground cinnamon
½ tsp ground cloves
1 tsp mace
½ tsp ground nutmeg
2 teaspoons vanilla extract
Additional sherry for basting

1. Cut cherries into 3 pieces. Dust all fruit by placing small batches in a heavy plastic bag with some of the flour,
2. In a large bowl, cream together butter and both sugars. Add eggs and mix well. Add sherry, jam and remaining flour, all spices and vanilla. Mix well. Add fruit and nuts, and mix well with clean hands.
3. Line 4 loaf pans (or size and shape you prefer) with parchment paper. Place a pan of warm water on the bottom shelf of the oven, and pre-heat to 350ºF.
4. Fill loaf pans to a depth of about 3 inches. Bake 55 - 60 minutes, then reduce heat to 325ºF and bake another 55 - 60 minutes. Reduce heat again to 300ºF and bake another 55 - 60 minutes. Add more hot water to the pan on the lowest rack as required.
5. Remove from oven, cool to room temperature, and wrap each loaf in 2 to 3 layers of cheesecloth. Brush cheesecloth with enough sherry to moisten the cloth. Wrap well in plastic or place in a ziplock bag, squeezing out as much air as possible. Store in a non-metal container with lid, in a cool, dark place.
6. Unwrap and apply additional sherry every 2 weeks for 2 months, then allow to age up to 1 year. You may need to apply additional sherry before cutting and serving.

4 loaves is a lot of fruitcake. To make 2 loaves, use 3 eggs and cut all other ingredients in half.
