1 lb suet
1 lb currents
2 lb raisins
12 large apples, cored
1 ½ lb brown sugar
½ lb mixed peel
juice and grated rind of 2 lemons
juice and grated rind of 1 orange
1 tsp salt
1 Tbsp nutmeg
1 Tbsp cinnamon
½ tsp mace
½ cup brandy

Directions:

1. Finely chop cored apples, preferably in a food processor.
2. Combine all ingredients and mix well.
3. Freeze until ready to use.

For Tarts:
1. Line tart tins with Never Fail Pastry. (1 batch makes 20 to 24 tarts.)
2. Place 1 - 2 Tbsp of mincemeat into each tart.
3. Cover with a small round of pastry (slightly smaller than diameter of tart)
4. Sprinkle tops with coarse sugar.
5. Bake at 375ºF for 15 to 20 min
