3 cups (750 ml) plain or vanilla Balkan-style yogurt
3 Tbsp granulated sugar
2 tsp grated lemon peel
1 tsp vanilla (2 tsp if using plain yogurt)
125 g package meringue nests or 16 meringues
⅓ cup sweetened flaked coconut
1 pint fresh raspberries
⅓ cup pistachios, chopped

1. To thicken yogurt, line a sieve with cheesecloth and place over a bowl. Scrape in yogurt. Cover and refrigerate at least 3 hors or overnight.
2. Turn thickened yogurt into a large bowl. Stir in sugar, lemon peel and vanilla. Coarsely crumble in meringues. Sprinkle with coconut. Stir to mix.
3. Spoon into dessert bowls. Top with berries and pistachios.
