2 tbsp icing sugar
1 tbsp butter
2 egg yolks
1 c flour
1 tsp baking powder
1/4 tsp salt
Topping:
2 c shredded coconut
2 beaten egg whites
1 c sugar
1 tbsp butter
Directions:
Directions:
Mix in order given and roll out to line a cake tin. Drain well one medium tin crushed pineapple and spread over crust. Beat topping, pour over pineapple. Bake in 350ºF oven for 30 minutes until a golden brown and set.
