Ingredients: Measurements are for an 8x8 inch glass baking dish. Measurements for a 9x13 inch glass baking dish are in parenthesis.
2 eggs (4) 6 demi-tasse cups decaffeinated Espresso coffee (12) 2 tsp. sugar (4) for Espresso coffee 2 tbsp. sugar (4) for mascarpone 250 - 300 grams mascarpone cheese (500 grams) 1 (7oz.) pkg. Savoiardi - Italian lady fingers for 8x8 pan bittersweet or dark chocolate for garnish

Directions: 1. Make at least 6 (12) demi-tasse cups of Espresso. (This is 1½ cups for 8x8 inch glass pan if using a standard measuring cup.) 2. Add 2 (4) tsp. sugar and let cool in a bowl. Set aside. 3. Separate eggs and beat 2 (4) egg whites until fluffy (no peaks) 4. Beat 2 (4) egg yolks with 2 (4) tbsp. sugar. 5. With a spatula fold egg whites into egg yolks until smooth. 6. Add 250 (500) grams mascarpone cheese to egg mixture. With mixer beat slowly until smooth. 7. One at a time dip lady fingers in Espresso until soaked but not soggy. 8. Line bottom of glass pan with soaked lady fingers. 9. Spread ½ of cheese mixture on top of lady fingers. 10. Layer soaked lady fingers on top of cheese mixture. 11. Spread remaining mascarpone mixture on top of lady fingers. 12. Top with shredded and/or curled chocolate. 13. Cover and refrigerate at least 4 hours or overnight. Serve cold. |

Notes: Tiramisu is Italy's "Pick Me Up" dessert. Grandpa's cousin, Ann Marie, served it when we were visiting Rome on our 25th Anniversary. Grandma prefers her recipe without liqueur. The lavish combination of mascarpone and coffee infused lady fingers makes it a perfect dessert. No wonder it is the most famous Italian dessert and one of the most popular desserts in the entire world.
