PORK RUB:
2 tsp chili powder
1¼ tsp salt
1 tsp. black pepper
1 tsp cinnamon
1½ lbs. Pork tenderloin, trimmed

SAUCE:
2 T. butter
1 cup chopped onion
2 T. ground fresh ginger
1 cup chicken broth
1/2 cup maple syrup

Directions:
Directions:
Combine the rub in a small bowl and rub pork with mixture. Refrigerate at least 30 minutes or overnight.
Heat a large skillet, coated well with cooking spray, over medium-high heat, add pork. Cook 6 minutes, browning on all sides. Place on a pan coated with cooking spray.
Bake in pre-heated oven @ 375º 30 minutes or until thermometer registers 155.
Let stand 10 minutes before slicing.

While pork bakes, melt butter in medium sauce pan over med-high heat. Add onion, cook 10 minutes o until golden brown, stirring frequently. Add ginger and cook 4 minutes. Stir in broth and syrup. Bring broth mixture to a boil, cook until reduced to 3/4 cup ( about 10 min.) Serve over pork.
