Ingredients: 1 lb. chourico sausage, casings removed 3 green bell peppers, seeded and chopped 2 (8 oz.) cans tomato sauce sandwich rolls of choice - Kaiser, Italian or hamburg roll

Directions:1. Spray skillet with cooking spray. Cut chourico into small pieces. 2. Place in skillet and sauté pieces on low heat for 5 minutes. 3. Add tomato sauce and heat. 4. Add chopped peppers to skillet and cook until peppers are tender. 5. Do NOT cover. Stir occasionally while cooking. 6. Serve on a sandwich roll of choice. |

Broccoli Rabe |

Ingredients: 1 bunch broccoli rabe 3 tbsp. olive oil 3 garlic cloves, chopped 1 cup water salt red pepper flakes (optional) ¼ lb. angel hair or thin spaghetti (optional)

Directions:1. Trim the stems of broccoli, about 1-2 inches. 2. Wash broccoli rabe properly. Drain well. 3. Spray bottom of pan with cooking spray and coat with olive oil. 4. Add chopped garlic, broccoli rabe, salt and red pepper flakes. Stir. 5. Add 1 cup of water. Sauté broccoli until tender. Add additional water as needed. 6. To serve with pasta: - Cook pasta according to directions. Drain. - Place pasta on platter and place broccoli rabe on top. - Stir to combine. |

Sauteed Cabbage |

Ingredients: 1 small head green cabbage, including outer green leaves (2½ pounds) 1 tbsp. olive oil* 1 tbsp. butter* or * 2 tbsp. butter
1½ tsp. salt ½ tsp. pepper ½ tbsp. apple cider vinegar, optional cooked rice or noodles, optional

Directions:1. Cut the cabbage in half and, with the cut-side down, slice it as thinly as possible around the core, as though you were making coleslaw. Discard the core. 2. Melt the butter in a large sauté pan over medium-high heat. Add the cabbage, salt and pepper. 3. Sauté for 10-15 minutes, stirring occasionally until the cabbage is tender and begins to brown. 4. Remove from heat and add vinegar if desired. Season to taste and serve warm. 5. Serve over rice or noodles, if desired. |

Notes: Vavo made the Chourico and Peppers often especially during the summer months. Grandpa makes it occasionally especially when the peppers are abundant at the end of the summer season. The Broccoli Rabe is one of our favorite vegetables. It can be served as a side dish, in a sandwich or with pasta. Broccoli Rabe is a rich source of fiber, vitamins and minerals including antioxidants. The Sautéed Cabbage is a flavorful low-carb side dish that is easy to make.
