(1) Filling:
8 fresh peaches ( peeled, pitted,and sliced into chunks), approx. 4 cups
3 tbsp white sugar
3 tbsp brown sugar
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1 tsp lemon juice
1 tbsp cornstarch

(2) Topping:
1 1/2 cup all-purpose flour
3 tbsp white sugar
1/4 cup brown sugar
1/2 tsp baking powder
1/2 tsp salt
6 tbsp unsalted butter, chilled and cut into small pieces
1/4 cup boiling water

(3) To sprinkle on top:
1 tbsp white sugar
1/2 tsp ground cinnamon

Preheat oven to 425º F.
(1) In a large bowl, combine the first list of ingredients (peaches, white sugar, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch). Toss everything together so the peaches are coated evenly, then put the mixture into a greased two-quart (8x8) baking dish and bake in the oven for 10 min.
(2) In another large bowl, combine from the second-list the flour, white sugar, brown sugar, baking powder and salt. Use a pastry blender to blend the butter into the mixture until it looks like coarse meal. Then, stir in the water until just combined.
(3) Take the peaches out of the oven and drop spoonfuls of the topping over them.
(4) Mix the sugar and cinnamon from third- list. Sprinkle the entire cobbler with the sugar and cinnamon.
(5) Bake the cobbler for about 30 min, or until the topping is golden.
(6) Serve with ice cream or whipped cream.
