1. Three Racks of Baby Back/Pork Ribs
2. Salt
3. DaddyB's Pork Rub
4. Apple Cider Vinegar

Directions:
1. Remove Membrane from the Bone side of the rack of ribs, using a kitchen knife to slip between bone and membrane to loosen membrane. Use paper towels to grasp the membrane and pull from the small end to the larger end to remove.
2. Liberally apply DaddyB's Pork Rub to all sides of Ribs and wrap with plastic food wrap. Refrigerate about 4 hours or overnight.
3. Preheat Smoker to 225º with a drip pan on the bottom rack containing 1 inch water. Use Hickory, Oak, Pecan or Mesquite wood soaked in water for about 1 hour before using to avoid flames
4. Remove Plastic Wrap and place Racks of Ribs on middle grates with bone down and smoke for about 2 hours or internal temperature is 150º. .During smoking process add wood and wood chips about every hour or follow recommendations of pellet grill. I add a wood chip smoking cage at the beginning of smoking process.
5.. Using cooking gloves double wrap each slab of Ribs with Heavy Aluminum Foil and continue to cook Bone Down until internal temperature is 190º or is tender and moist.

To keep warm until ready to cut ribs and serve, place wrapped slabs of Ribs in a cooler and fill empty space with a blanker or large beach towel. This will keep Ribs hot for about 2 to 3 hours.
