3 cups Fusili Pasta
Extra Virgin Olive Oil + a few drizzles
1 Small Graffiti Eggplant
1 Pint Cherry Tomatoes
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder

*4oz of Tomato Puree or Sauce is optional

Directions:
Directions:
-Preheat oven to 450º

- Cut the Eggplant into 1 inch cubes and add to a baking sheet with tomatoes. Toss with oil, salt, pepper, garlic and onion powders.
-Roast Eggplant and Cherry Tomatoes approximately 25 minutes or until the tomatoes have burst and the eggplant is nicely browned

- Drop pasta into boiling water then cook to your liking.

- Toss vegetables, puree or sauce with pasta and top with grated cheese.
