4 yellow squash
4 zucchini
1/2 onion
1 cup sour cream
3 eggs
1-1/2 cups mayonnaise
1-1/2 cups shredded Cheddar
1 small pack ranch dressing mix (dry)
1 cup Heavy Whipping Cream
1 cup bread crumbs (Panko or japanese bread crumbs)
1 stick butter

Directions:
Directions:
Slice yellow squash, zucchini and onions with the food processor slicing attachment. Cook, drain, and set aside allowing to cool. In a separate bowl combine the eggs, sour cream, mayonnaise, Cheddar cheese, heavy whipping cream and ranch dressing, using a wire whisk. Add the cooled squash mixture. Portion in proper container and bake in a water bath at 275°F for about 30 minutes or until center has reached 165°F or is “set”. Remove casserole from oven. On a cookie sheet place the bread crumbs drizzle with butter and bake in the oven until light brown. Top casserole with toasted bread crumbs.
