Jalapeno Poppers


Ingredients:

1 pkg cream cheese - softened
2 c. shredded sharp cheddar cheese
2 T. minced parsley
12-15 medium jalapeno peppers - halved lengthwise, seeded and remove the ribs
(If you want them hot leave in some seeds & ribs)

1/2 c. flour
1/4 tsp. salt
1/4 tsp. pepper

2 large eggs, beaten
4 T. water

2 c. bread crumbs
2 tsp. paprika
1 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. pepper

Prepare your peppers.

Combine cream cheese, cheddar cheese & parsley in a mixing bowl.

In a separate bowl combine flour, salt & pepper.

In another bowl combine the beaten eggs & water.

In another bowl combine bread crumbs, paprika, garlic powder, salt & pepper.

Stuff the peppers with the cheese mixture. Dip each pepper in the flour mixture then the egg wash, then in the bread crumb mixture. Place each pepper cut side up on a nonstick baking sheet that has been sprayed with Pam or line the baking sheet with parchment paper.

Bake until golden brown & cheese has melted (for about 30 minutes).
