2 cups cooked quinoa, at room temperature or chilled
1 can (15 ounces) black beans, drained and rinsed
1 mango, peeled and diced
1 red bell pepper, diced
4 green onions, thinly sliced
1/2 cup chopped fresh cilantro
3 tablespoons red or white wine vinegar
3 tablespoons olive oil
2 tablespoons fresh lime juice
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
In a large bowl, combine quinoa, mango, red pepper, green onion, black beans, and cilantro.

In a small bowl, combine vinegar, olive oil, lime juice, salt, and pepper. Stir with a whisk. Pour on top of salad. Stir to combine. Chill for at least 1 hour.
