2# frozen or fresh tiny baby Lima beans
1# shrimp
1 onion chopped
1 tablespoon chopped garlic
2 tablespoons vegetable oil
1 tablespoon butter
Salt and pepper to taste
Water
1 tablespoon Rotel or 1/2 fresh tomato diced

Directions:

In large saucepan sauté onion until soft in vegetable oil Add garlic Lima beans salt pepper and just enough water to cover Lima beans Cook on medium to high heat until most of water evaporates Add shrimp tomato and cook a few minutes until shrimp turn pink Add butter and adjust seasoning
