"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Directions:
Cover ribs with dry rub on both sides of slab (s)
Cook on 300 degree grill for at least an hour, turning at the half hour. Check meat for tenderness; you may need to cook it a little longer.

Cover ribs with BBQ sauce mixture. Again, start cooking this combination at 300 degrees….check occasionally for tenderness. Meat should be soft before you end this phase.

Cut ribs into chunks of 4. Wrap in foil and then wrap again after you have put a generous amount of BBQ sauce on the chunks. We usually put two chunks in a package, spreading a little sauce between the chunks as well as on the top. Lay these foil packets on grill and leave them for another hour. Meat should be soft and starting to pull off the bone
