4-6 medium zucchini sliced 1/8" thick
4/5 cup shredded carrot
1/2 cup chopped onion
6 tablespoons butter or half butter and half olive oil
3 cups herbed Pepperidge Farms stuffing (minced not cubed)
1 can condensed cream of chicken soup
1 coup sour cream (or yogurt)

1. Cook zucchini until tender
2. Cook carrot and onion in 4 tbs butter
3. Stir in 2 cups stuffing mix, soup and sour cream
4. Gently stir in zucchini an d turn into a 2 quart casserole
5. Melt remaining butter and balance of stuffing
6. Top casserole with stuffing/butter mixture
7. Bake @ 350º for 30-40 minutes
