4 peaches, peeled and pitted
1 T fresh lemon juice
1 envelope (1/4 oz) unflavored gelatin
1 c peach nectar, chilled

PANNA COTTA
1 envelope (1/4 oz) unflavored gelatin
1 1/2 c cold whole milk
1 1/2 c heavy whipping cream
1/3 c sugar
1 t grated lemon zest
1/2 t salt
1/4 t vanilla extract

Directions:
1. Process peaches and lemon juice in a blender until smooth.
2. In a microwave-safe bowl, sprinkle gelatin over peach nectar; let stand 1 minutes. Microwave on high 30-40 seconds. Stir and let stand 1 minute or until gelatin is dissolved. Let stand 5 minutes. Stir in the pureed peach mixture. Pour into eight champagne flutes or stemless white wine glasses. Refrigerate until set, at least 3 hours.
3. In a small saucepan, sprinkle geltain over milk; let stand 1 minute. Heat and stir over low heat just until gelatin is completely dissolved (do not boil). Stir in cream, sugar, zest, salt and vanilla. Pour over the peach layers. Refrigerate until set, at least 2 hours. If desired, garnish with peeled peach slices and mint leaves.
