1 1/2 cups graham cracker crumbs
1/2 cup granulated sugar
1/4 cup melted butter
1/2 tsp cinnamon

Filling:
5 8oz packages cream cheese at room temperature (not light cream cheese)
5 eggs at room temperature
2 egg yolks at room temperature
1 3/4 cups white sugar
1/8 cup all purpose flour
1/4 cup heavy whipping cream
2 tsp vanilla extract
Juice of half a lemon

For the crust:
Mix the graham cracker crumbs, 1/2 cup of the white sugar, the cinnamon and the melted butter together. Press mixture into the bottom of one greased 9 or 10 inch springform pan.

For the filling:
In a large mixer bowl, combine cream cheese, eggs and egg yolks; mix until smooth. Add the remaining 1 3/4 cups white sugar, the flour, vanilla, lemon juice and the cream. Don't allow the mixer to go above the '1' setting so as to avoid getting too much air into the filling. Blend until smooth. Pour batter into prepared pan.

Place in a cold oven, turned the oven on 200 and bake for 3 and 1/2 hours. Turn the oven off and leave it in there (oven door closed) for about 3 hours and then refrigerate.
