2 c. flour
1½ tsp salt
1 T. baking powder
1 c. milk
2 large eggs
⅔ c. sugar
1 c. peanut butter
⅓ c. vegetable oil
½ c. jam or jelly

¼ c. sugar

Directions:
Preheat oven to 375º. Spray muffin pan with cooking spray (or use cupcake liners). Stir together flour, salt and baking powder in a large bowl. Add milk, eggs, sugar, peanut butter and oil; combine ingredients with electric mixer, on low speed, until moistened. DO NOT over-beat. Fill prepared muffin cups evenly with half the batter. Press an indentation in the middle of each muffin, then place 1-2 tsp jam in the indentation. Evenly divide remaining batter between muffin cups. Sprinkle with sugar. Bake 18-20 minutes. Remove from oven and cook in pan for 5 minutes.
