One-Pan Salmon Recipe

4 (8oz) salmon fillets
extra virgin olive oil
salt and pepper
broccoli crowns
¼ c. chopped chives
2 T. olive oil
2 T. whole grain mustard
2 tsp. honey

Directions:
Directions:
Preheat oven to 500º. Prep sheet pan with 1 T. Oil. Trim the bottoms of the broccoli crowns. Cut crowns into 2” flowerettes. Place in a bowl. Season with ¼ tsp. salt, 1 tsp. oil, ¼ tsp. pepper. Toss broccoli with the seasonings, then place on sheet pan. Roast for 22-24 minutes, rotating half way through.(I would think preparing cauliflower the same way, and roasting would work well too.) Take off roasting pan, and keep warm. Can sprinkle with freshly grated parmesan at this time.
Turn the oven down to 275º. Place salmon on same baking sheet, skin side down (if there is skin on your fillets.) Bake for app. 22 mins, turning over half-way through cooking. Salmon should be flaky when done.
Topping:
While salmon is baking, mix together chives, olive oil, whole grain mustard, honey, and salt and pepper.
