6 to 8 pounds pork shoulder, cut into 2-inch steaks if possible
2 large onions, chopped
5 to 7 garlic cloves, minced
1 cup apple cider vinegar
1 tablespoon barbecue sauce
1 tablespoon salt
2 teaspoons pepper
2 bay leaves
2 tablespoons chili powder
1 tablespoon brown sugar or honey
½ teaspoon ground cumin

Trim fat on pork shoulder to no more than ¼-inch thick. Place chopped onions and garlic in the bottom of a large crockpot. Add remaining ingredients. Cook on low for 6 to hours until pork is falling apart. Turn crockpot off. Remove pork from crockpot until cool enough to handle. Discard bay leaves. Once cool, shred pork, removing gristle and large pieces of fat. Return pork to the crockpot and cook for an additional 30 to 60 minutes. Taste pork and adjust seasonings and vinegar as needed. To remove even more fat, chill the liquid in the crockpot overnight and remove the hardened fat before cooking the second time or strain liquid through a fat separator.

By having the pork shoulder cut into steaks, you can fit everything in the crockpot easier as well as more surface area of the pork will be in contact with the sauce as it cooks. If your butcher cannot cut the pork for you, cook the whole shoulder.
