1 pound tart apples, such as Gala or Fuji
4 ounces walnut halves, lightly toasted
¾ teaspoon ground cinnamon
3 to 5 tablespoons sweet kosher red wine

Directions:

Peel, core, and finely dice the apples. Add in the walnuts and chop finely. In large bowl, stir together all ingredients and mix well. The charoset should have the texture of a coarse paste. Taste and add more cinnamon or wine as needed. Rest in refrigerator for 1 to 2 hours.

You can use a food processor to make the charoset. Add brown sugar or honey if you prefer a sweeter charoset.
