Bone in Pork
2T. Oil
Beef Stock
6 C. Cold Water
1T. Dashi
1t. Sea Salt
1 1/2 T. Sake
1/2 C. Sugar
3/4 C. Shoyu

1 or 2 pkg Udon Noodle
6-8 C. Cold Water

Directions:
Prepare Pork;
Cut pork into 1” cubes, keep bone. Add oil to stockpot, heat over med-high heat, add pork and the bone. Brown the meat, turn and cook other side. Once browned, add the stock then add the water.
Turn heat down and simmer for 1 hour. Strain out pork and bone. Add Dashi, salt, sake, sugar and Shoyu. Taste and adjust seasonings. Keep on low heat.
Bring water to a boil. Add noodle and stir in. Bring to a boil and cool down with a cup of cool water 3 times. Strain and add to broth.
