4 egg whites
⅛ tsp. Cream of tartar
6 Tbs. granulated sugar
½ tsp. Vanilla
1½ cups shredded coconut
¼ cups granulated sugar
1 Tbs. cake flour

Directions:
Directions:
Preheat oven to 325ºF. With electric mixer at high speed, beat egg whites with cream of tartar until stiff, but not dry. Gradually beat in 6 Tbs. of sugar and vanilla until mixture forms soft peaks. Mix coconut with ¼ cup of sugar and cake flour and fold into egg white mixture. Place 12 paper muffin liners into muffin tins and fill each ⅔ full with mixture.

Bake 25-30 minutes or until tops are golden brown.
