3 eggs, lightly beaten
1/2 cup flour
1/4 tsp. salt
1 tbsp. sugar
1/2 cup milk (whole is best)
1/2 tsp. vanilla extract

Directions:
Directions:
Preheat the oven to 400 with a 10” or 12” cast iron skillet inside. Whisk together eggs, flour, salt, and sugar until smooth. Whisk in milk and vanilla until a smooth batter has formed. Once the oven and skillet are preheated, add 2 tbsp. butter to the skillet. Close the oven door and wait for the butter to melt. Once the butter is melted open the oven, and tilt skillet to disperse the butter evenly. Pour in the batter and close oven door. Bake for 15 minutes. Pancake should be golden brown and puffed up. Do not open the oven door during cooking time or the pancake will deflate. Serve with powdered sugar. Quartered lemon slices to squeeze juice over the pancake is also a good addition. Goes well with berries.

This recipe doubles beautifully. If doubling bake for 20 minutes.
