1 yellow bell pepper - sliced
1 red bell pepper - sliced
4-5 chopped green onions
2-3 c curly kale in small-ish pieces
shrimp (approx 15-20 raw de-veined)

garnish: sprinkle of red pepper flakes and chopped mint and/or cilantro

sauce:
1/2 c low sodium soy sauce
2 T rice wine vinegar
2 T sugar
2 T corn starch
1/2 t crushed red pepper flakes
1 T ginger - chopped finely (or more, to taste)

Directions:
Directions:
Saute in peanut oil the peppers, green onions. Move to edges of skillet.
Add shrimp until cooked throughout (2-3 minutes)
Add curly kale until cooked.
Stir in sauce and cook slightly.
Garnish with red pepper flakes and mint/cilantro.

So easy!
