vanilla cake
½ c butter softened
1c granulated sugar
2 large eggs - room temperature preheat oven to 350º
1 tsp vanilla extract
1⅓ c all purpose flour
1¼ tsp baking powder
¼ tsp salt
½ c heavy whipping cream
3 c(1 lb) fresh strawberries stemmed and sliced
coconut cream filling

coconut cream filling:
2- 8oz pkg. cream cheese softened
½ c confectioners sugar
1 c heavy whipping cream
½ c cream of coconut
½ tsp coconut extract

Directions:
Line bottom of a 9" round cake pan with parchment paper;spray with baking spray with flour. In a large bowl beat together butter and sugar with a mixer at medium speed until fluffy, 3-4 minutes, stopping to scrape sides of bowl. add eggs, one at a time, beating well after each addition. Add vanilla extraxt, beating until incorporated. In medium bowl, whisk together flour, baking powder, and salt. With mixer on low speed,gradually add flour mixture to butter mixture alternately with cream, beatng until just combined after each addition. spoon batter into prepared pan. Bake until wooden pick inserted in center comes out clean, 30-35 minutes. let cool for 10 minutes. remove from pan and let cool completely on a wire rack. when cool cut into 1" cubes .

for coconut cream filling:
In a large bowl beat cream cheese and confectioner's sugar with a mixer at medium speed until smooth, about 3 minutes, stopping to scrape sides of bowl with a rubber spatula. Add cream of coconut and coconut extract and beat another 1-2 minutes. use immediately.

In a trifle bowl layer cake pieces, strawberry and coconut cream in that order ending with coconut cream on top. Garnish with strawberry flower and mint if desired.
