½ cup sugar
4 teaspoons baking powder
4 teaspoons baking soda
2 teaspoons salt

Combine all ingredients in a large bowl; stir to blend. Stir with a wire whisk until evenly distributed. Store mixture in an airtight container and use within 6 months.
 

Buttermilk Waffles

2 ½ cups buttermilk pancake and waffle mix
2 cups water
3 eggs, separated
¼ cup oil

Preheat waffle maker. In a large bowl, combine mix, water, egg yolks, and oil. Beat with a wire whisk until just blended. In a clean bowl, beat egg whites until stiff. Fold into egg yolk mixture. Bake according to waffle maker instructions.
 

Buttermilk Pancakes

1 egg, beaten
1 cup water
2 tablespoons oil
1 ½ cups buttermilk pancake and waffle mix

Combine egg, water, and oil in a small bowl. Whisk in buttermilk pancake and waffle mix. Blend well. Add more water if thinner pancakes are desired. Let stand for 5 minutes. Cook on a hot buttered griddle about 3 to 4 minutes, until browned on both sides.
