1 tablespoon olive oil
1 lb. smoked sausage
1½ cups diced onions
2 cloves garlic, minced
2 cups chicken broth
1 (10 oz.) can Rotel tomatoes w/ green chilies, mild
½ cup heavy whipping cream
8-oz. Penne Pasta
½ teaspoon each salt and pepper
1 cup Monterey Jack cheee, shredded (Pepper Jack)
⅓ cup thinly sliced scallions (green onions)

Directions:
Add olive oil to an oven safe skillet over medium-high heat until just smoking. Add sausage and onions and cook until light browned. Add garlic and cook until fragrant. Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet and reduce heat to medium low. Simmer until pasta is tender, about 15-20 minutes. Remove skillet from heat and stir in ½ cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown and bubbly. NOTE: I use more olive oil to brown the sausage and onions because it seems that 1 tablespoon is not enough. I also use a 2-cup package of Pepper Jack cheese just because I like my pasta gooey and I like cheese.
