Ingredients: 1 Shortbread ready crust [Keebler] 6 oz semisweet chocolate chips 2 Tbs butter 1 8-ounce cream cheese (light) softened 1 cup powdered sugar 1 tsp orange zest [grated orange peal] 1 quart strawberries, sliced 1/4" thick 1/2 cup Cool Whip [if desired] 2/3 cup sugar 1 cup water 3 Tbs cornstarch 3 Tbs Strawberry Jello powder

Directions:1 Combine chips and butter in top of a double boiler. Melt slowly until spreadable. Carefully spread over the bottom of the pie crust. Let cool 2 In a small bowl, combine cream cheese, powdered sugar and orange zest; beat until smooth. Carefully spread over cooled chocolate layer. Refrigerate 1 hour or until firm 3 Combine water, sugar, and cornstarch into a small pan. Bring to a boil stirring until it thickens. 4 Remove from heat, stir in Jello and a few drops of red food coloring[if desired] 5 Stir in sliced strawberries and pour mixture into pie shell 6 Keep refrigerated. Remove from refrigerator 1 hour before serving 7 If adding Cool Whip, top after refrigerating 8 servings |
