2 tablespoons olive oil
2 tablespoons fajita mix
3 chicken breasts, boneless and skinless, sliced into long strips

Sour cream
8 tortillas
2 tablespoons butter

Directions:
Directions:
Place the chicken breast strips into a large bowl. Add 1 tablespoon fajita mix, and mix well.

In a large skillet, heat 1 tablespoon olive oil. Add the chicken. Cook the chicken for 5 to 10 minutes until fully cooked and slightly charred. Remove from skillet, and wipe the skillet clean.

Add 1 tablespoon olive oil to the skillet. Heat it up. Add the onion, and cook 2 minutes until slightly translucent. Add the peppers and the remaining fajita mix, and mix well. Cook 2 minutes. Add chicken to the skillet, and cook for 1 minute.

In a clean skillet, melt a bit of butter. Add a tortilla, and move it around until it's buttery. Add a little bit of the chicken and onion mixture on top of the tortilla and about 1/4 cup cheese. Add another tortilla on top, and pat it down. Now flip it over, and cook on the other side until nice and golden. Remove from skillet, and cut into quarters.

Repeat these steps with the remaining tortillas.

Serve with sour cream and salsa.
