1 cup sugar
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 stick butter
1 tsp. vanilla extract
1 cup sour cream
2 eggs

Mixture for middle and top of cake:
½ cup brown sugar
½ cup finely chopped walnuts
1 tbsp. cinnamon

1. Preheat oven to 350º. Spray tube pan with baking spray.
2. Beat butter and sugar then add eggs one at a time. Beat well.
3. Whisk dry ingredients together and gradually add to mixture.
4. Gradually add sour cream and vanilla.
5. Pour half of batter into pan. Sprinkle with half of topping mixture.
6. Pour remaining batter and sprinkle rest of topping mixture.
7. Bake 45 minutes. Let cool before removing from pan.
8. Slice cake and serve with tea or coffee.
 

Maple Walnut Chiffon Cake


Ingredients:

2¼ cups sifted flour (pile lightly in cup)
¾ cup sugar
3 tsp. baking powder
1 tsp. salt
¾ cup brown sugar (free of lumps)
½ cup vegetable oil
5 medium egg yolks
¾ cup cold water
2 tsp. maple extract
1 cup of egg whites (7 or 8 eggs)
½ tsp. cream of tartar
1 cup walnuts, finely chopped

1. Allow eggs to reach room temperature on counter for one hour.
2. Heat oven to 325º. Use tube pan with removable bottom, ungreased.
3. Whisk together first 4 ingredients. Add brown sugar.
4. Make a well and add oil, egg yolks, water and extract. Beat well.
5. In another large bowl beat egg whites and cream of tartar until very stiff.
6. Gently fold the egg yolk mixture into the egg white mixture until blended.
7. Immediately fold in chopped nuts. Place batter in ungreased tube pan.
8. Bake 40 minutes. Raise temperature to 350º. Bake for 10 minutes.
9. Bring temperature back to 325º until cake is done.
10. Turn cake over on cake rack. Cake will loosen on it's own and fall.
11. Do not frost until cake is completely cooled.

The German Coffee Cake is very moist and flavorful. It is great to serve for brunch with tea or coffee. The Maple Walnut Chiffon Cake was Vavo's signature cake. It is so light that it just melts in your mouth.
