Directions:1. Preheat oven to 350º. Prepare spring form pan (6 x 2¾ inch) with baking spray. 2. With whisk beater attachment, beat first four ingredients on high speed for 5 minutes. 3. Remove from mixer. Mix flour and baking powder then fold into mixture. 4. Pour batter into prepared pan. 5. Bake 40 minutes. 6. Allow to cool for 15 minutes then remove outer rim of pan. |

Directions:1. Preheat oven to 375º. Prepare pan/pans with baking spray. 2. With whisk beater attachment, beat eggs well then gradually add sugar beating well. 3. Combine flour, baking powder and salt. Add dry ingredients and water alternately. 4. Pour into pan. Bake 30 minutes for loaf pan; 40 minutes for tube pan. |

Ingredients: 1 orange sliced, seeds removed 3 eggs ½ cup sugar ⅓ cup oil
2 cups flour 3 tsp. baking powder ½ tsp. salt

Directions:1. Heat oven to 340º. Spray loaf pan with baking spray. 2. Place orange slices with skin, eggs, sugar and oil into a blender. Blend until smooth. 4. In a separate bowl whisk together the flour, baking powder and salt. 5. Fold into first mixture just until combined. Pour batter into prepared pan. 6. Bake for 40 minutes. 7. Remove from pan and cool on wire rack. |

Notes: Sponge cake was very popular years ago and could be used for Strawberry Shortcake. The two Sponge Cake recipes on this page use different types of pans. The second Sponge Cake recipe is from Vavo. Her Orange Cake was always requested by Grandma as her birthday cake. It was so moist and tangy. The ingredients for this Orange Cake are the same as the original recipe but the directions are different. A blender is used. This makes the cake lighter but just as moist.
