1 3/4 cups sugar
1 Tbs ground cinnamon
2 1/2 cup all-purpose flour
2 tsp cream of tarter
1 tsp baking soda
1/2 tbs salt
8 Tbs unsalted butter, softened
8 Tbs vegetable oil
2 large eggs

1 Adjust oven rack to middle position, preheat oven to 375
2 Line 2 baking sheets with parchment paper
3 Combine 1/4 cup sugar and cinnamon in a shallow dish
4 Whisk flour, cream of tarter baking soda and salt together in a medium bowl
5 Using mixer, beat butter, shorting, and remaining sugar on medium speed until light and fluffy, 3 to 6 minutes
6 Beat eggs in one at a time until incorporated, about 30 seconds
7 Reduce speed to low and slowly add flour until combined, about 30 seconds
8 give dough a final stir to make sure no flour pockets remain
9 Working with 2 Tbs of dough at a time roll into balls, roll into sugar. roll half of dough at a time
10 Bake 1 sheet at a time until cookies are set and just beginning to brown, but centers are still soft and puffy, 10 to 12 minutes rotate sheet half way through baking
11 Let cookies cool on baking sheet for 10 minutes then transfer to wire rack to cool to room temperature Makes 24
