1 c. Wheat flour
1 1/3 c. White flour
2 tsp sugar
1/2 tsp salt
2 1/4 tsp yeast (or 1 PKG, but NOT fast rising)
1 c milk
2 T olive oil

Directions:
In a stand mixer bowl, add flours, sugar, salt, and yeast. Give a quick stir with a whisk. Combine milk and oil. Using the bread hook attachment, turn mixer on, and pour milk mixture into mixer bowl. Combine on low for 30 seconds, then turn mixer up to medium for 5 minutes. Scrape bowl down as needed while mixing. The dough should form a soft ball during mixing. Turn onto a floured surface, knead until dough is no longer sticky. Place in oiled bowl, turn once to oil dough. Cover and let rise in warm place for 30 minutes. (Your oven on lowest heat is perfect.) Once you remove dough, preheat oven to 425 degrees.
Pour 3 T olive oil into each of 2 8-in round baking pans. 8-in square will work too. Tip pans to spread oil evenly.
Turn onto floured surface, cut dough in half. Pat into baking pans. Top with sauce, cheese, and preferred toppings. Bake at 425 until cheese is lightly golden, about 20-25 minutes. Remove pizzas from pans and let sit 3-5 minutes before cutting.
