Zucchini Noodles with Cherry Tomatoes


Ingredients:

1 zucchini or summer squash, about 8" long
1 large red onion, thinly sliced
2 cloves garlic, minced
1 cup cherry tomatoes, quartered
handful of fresh basil leaves, finely sliced
2 tsp. olive oil

To finish:
2 tbsp. olive oil
1 tbsp. Balsamic vinegar

1. With tool, spiralize zucchini into spaghetti strands.
2. Heat 2 tsp. olive oil in a large nonstick skillet over medium heat.
3. Add onions and sauté until tender, 6-7 minutes.
4. Add garlic and cherry tomatoes and sauté briefly.
5. Add zucchini and basil. Sauté another 3-4 minutes,
until tomatoes are soft and zucchini is just tender.
6. Remove from heat, add olive oil and vinegar, then toss to combine and serve.

grated or shredded cheese

2. Heat plain sauce.
3. Serve sauce over zucchini. Sprinkle with cheese.
