3 tbsps. chicken broth
2 cloves garlic, minced
1 medium yellow onion (about 1 cup)
¾ cup carrots, finely chopped
1 - 28 oz. can Italian plum tomatoes, undrained
3 tbsps. fresh parsley, chopped
2 tbsps. fresh basil, chopped or 1 tsp. dried basil
¼ tsp. crushed red hot pepper flakes
2 tbsps. grated parmesan cheese (optional)

Directions:
Directions:
Bring broth to a simmer over medium heat. Add garlic, onion and carrot, stirring occasionally until tender, about 5 minutes. Add tomatoes with liquid; break up tomatoes, stir in parsley, basil, red hot pepper flakes. Simmer then reduce heat to medium low, stirring occasionally until sauce is slightly thickened, about 20-25 minutes. Remove from heat; stir in parmesan. Freeze sauce in plastic container up to 3 months. Thaw in refrigerator.
