1 tablespoon butter
1/2 cup sliced mushrooms
1 clove garlic, minced
8 ounces firm tofu, pressed and crumbled
1/2 cup thinly sliced kale
3 eggs
Salt and pepper to taste

Directions:
Directions:
Heat nonstick skillet over medium heat.
Melt butter and saute mushrooms 5 minutes.
Add garlic and cook 1 minute.
Add tofu, salt and pepper to taste, saute 6 minutes.
Add kale, saute 7 minutes.
Whisk eggs in a bowl, pour over all.
Cook, stirring, until eggs are set.
