Cauliflower Fritters |

Ingredients: |
Ingredients: 1 head of cauliflower 4-5 eggs 1 large clove of garlic, chopped ⅓ cup Pecorino Romano cheese, grated salt and pepper plain bread crumbs olive oil

Directions: |
Directions: 1. Remove leaves from cauliflower and cut off stalks at bottom. 2. Immerse the whole cauliflower upside down into a pot of cold water. Bring to a boil then lower heat to simmer. Parboil the cauliflower. 3. Drain water and let cool. When cool enough to handle, cut into florets. 4. Put eggs, garlic, cheese, salt and pepper in a bowl. Beat with a whisk. 5. Place several florets at a time into batter. 6. Place breadcrumbs on a platter. Roll florets in breadcrumbs. 7. Pour oil in skillet and heat. Place coated florets into heated oil and fry until golden on all sides. 8. Place florets on a plate lined with paper towel to drain. 9. As egg batter lessens, add more egg and seasoning if needed. 10. Serve as a side dish. |

Roasted Cauliflower |

Ingredients: 1 head of cauliflower, washed and cut into florets ⅓ cup olive oil coarse sea salt pepper balsamic vinegar parsley, chopped

Directions: |
Directions:1. Preheat oven to 375º. Line a baking sheet with parchment paper. 2. Place cauliflower florets in a large bowl. Mix with olive oil, salt and pepper. 3. When florets are coated with oil, drizzle with moderate amount of vinegar. 4. Spread on baking sheet. Roast 30-35 minutes, stirring once. 5. Remove from oven. Drizzle again with vinegar. 6. Top with chopped parsley. Serve as side vegetable. |

Cauliflower with Tomatoes |

Ingredients: 1 head of cauliflower 4 tsp. olive oil, divided 3 cups Pastene Kitchen Ready tomatoes
1 cup water as needed 1 clove garlic, chopped salt and pepper to taste

Directions: |
Directions:1. Wash cauliflower and cut into florets. 2. Spray a Dutch oven with cooking spray and coat bottom of pan with oil. 3. Sauté the garlic. Then add the tomatoes, salt and pepper and heat. 4. Add cauliflower florets. Let cook, gently stirring occasionally. 5. As tomato thickens add water. Cook until cauliflower is tender. 6. Serve as side dish. |
