8 cups sliced peeled watermelon rind (2x1-in. pieces)
12 cups water
8 tbsp canning salt
2 cups sugar
2 cups white vinegar

Per jar:
1 tsp pickling spice
2 cloves garlic
1 bunch dill

Directions:
Directions:
1. Place pickling spice, garlic and dill in each jar.
2. Place the watermelon rinds into the jars.
3. In a sauce pan mix sugar, vinegar, water and salt. Bring to boil for 10 minutes.
.
4. Carefully ladle hot mixture into the jars until mixture is to the top. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight.
5. Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

Note: To prepare watermelon rind, remove dark green peel from watermelon rind and discard.
