5 cups tart apples, cored, peeled and chopped
1 cup sugar
1 cup raisins
½ cup pecans or walnuts, chopped
¼ cup vegetable oil
2 tsp. vanilla
1 egg, beaten
2½ cups flour
1½ tsp. baking soda
2 tsp. ground cinnamon

1. Preheat oven to 350º F. Lightly spray 9x13 inch baking dish with baking spray.*
2. In a large mixing bowl, combine apples with sugar,
raisins and nuts; mix well and let stand 30 minutes.
3. Stir in oil, vanilla and egg.
4. Sift together flour, baking soda and cinnamon; stir into apple
mixture about ⅓ at a time, enough to moisten dry ingredients.
5. Spread batter evenly across pan. Bake 35-40 minutes.
6. May leave in glass pan. Cut into squares to serve.

Healthy Swaps
Instead of oil, try applesauce or nonfat or low-fat yogurt.
Instead of raisins, try semi-sweet chocolate chips.
Nuts can be eliminated.

*Batter fits in a 9x13 inch pan. For a higher cake use a slightly smaller pan.

An important step in this recipe is marinating the apples. The juices from the apples form a liquid that absorbs the dry ingredients. This reduces the amount of oil that would otherwise be needed for this type of cake. The photo on the left illustrates the apples being marinated. On the right is picture of the cake that has been cut into squares. The Apple Coffee Cake is an all time favorite.
