2 lbs. yellow onions
14 oz. brown sugar
14 oz. sherry vinegar
4 oz. maple syrup
26 oz. port or sweet wine
Pepper to taste

Peel onions and dice finely. In a good- sized pot on medium heat melt brown sugar until it starts to caramelize. Add onions and cook for 3 minutes until fully caramelized. Add sherry vinegar, maple syrup and port. Simmer for 30-35 minutes, reducing until most liquid is gone. Let cool, then refrigerate until ready to use.
This will keep refrigerated for 3 weeks if kept refrigerated or it may be preserved or frozen. It is awesome on meat, sandwiches, crackers, burgers and many more items.
